Baked rice pudding can be much more colorful than prescribed in original recipes. What I like to do is coloring food. It is so exciting and you never know how the food will look like at the end. The results can be exhilarating but would all people share the same excitement?
A few years ago a friend of mine made an experiment. She went to a local bakery and asked a baker to color the bread rolls with food colors for her party. He was quite surprised but eventually did what she asked. When the bread rolls were baked everyone in the bakery was really impressed by all those colorful bread rolls. They actually liked them so much that they decided to launch the production big time. The result? The bread rolls were really nice and colorful but something that market would be willing to "digest". The move was clearly too bold or perhaps too early.
On the day of the party we made a fantastic huge pile of colorful bread rolls. However, most of the people didn't share our excitement. They were suspiciously circling around the pile and wondered if the bread rolls were edible. A few of them took a bite or two but most were just observing and making comments. That event reminds me of experiments Coca Cola company made with their favorite product, interesting.
I am a big fan of Chinese pandan cake which is extraordinarily green, a result of pandan rice flakes. So I thought to my self, why not using pandan rice flakes in rice pudding recipe. It took some time to get the right texture but I was very pleased with the result. My mum's baked rice pudding recipe was a basis for this baking experiment. In fact pandan rice flakes were the only difference. Because of their distinct color the cooked rice turned bright green. But this is not the only benefit of pandan rice flakes.
