• For the cake:
  • 3 medium eggs

  • 170g (or 6oz) butter, softened
  • 170g (or 6oz) caster sugar
  • 2 tbsp (or 15ml) warm water
  • 2 tbsp (or 16g) cocoa powder
  • 1 tsp (or 4g) baking powder
  • 200g (or 7oz) self-raising wholemeal flour
  • 6 tbsp (or 90ml) plain yogurt
  • For icing:
  • 100g (4oz) milk chocolate
  • 170g (6oz) dark chocolate
  • 150ml (1/4 pint) soured cream

Chocolate Cake of some sort is probably the most popular dessert in the world. We’ve been travelling around quite a lot but regardless of where we were, there was always a Chocolate Cake on the menu – even in the most remote farm cafes in English countryside.

So, why is that? Well, obviously, chocolate is the most popular sweet in the world and not selling Chocolate Cake would be crazy so almost all cafes sell this delicious dessert.

Furthermore, every chocolate cake has unbelievably rich taste, it is soft and it can be served on pretty much any occasion.

In our family we are not 100% chocoholics, but we all like a good piece of cake. When my daughter was younger, she would always go for the sweetest possible Chocolate Cake, but over the past couple of years (I guess it is down to her transition into teenage years) her taste has changed dramatically. Now she would always choose a chocolate dessert made with dark, less sweet chocolate. I would pretty much do the same, but my little son and my husband – they don’t mind if the cake is made with milk, white or dark chocolate. They would finish it without any question and order another one.

Bellow is our favourite  Chocolate Cake recipe.

This chocolate cake is not too sweet and it tastes a bit different than any other cake.  Chocolate icing makes the cake absolutely yummy and – decorated with chocolate curls – it looks beautiful. Wholemeal flour and yogurt make the cake crunchy and light in the middle.

You will need a 20cm (or 8in) round cake tin and at least 7 ½ cm (or 3in) deep.

Ingredients
  • For the cake:
  • 3 medium eggs

Instructions
  1. Heat the oven to 170C (or 325F or gas mark 3 or fan oven 150C). Grease the cake tin with butter and line with a baking parchment.
  2. Put the softened butter into a mixing bowl. Beat it with a wooden spoon until it is soft and smooth. Stir in the sugar. Beat the mixture until it is light and fluffy.
  3. Beat the eggs in a small bowl. Add the eggs to the butter and sugar mixture, a little at a time. Beat the mixture well after each addition.
  4. Put the cocoa powder into a small bowl. Stir in warm water to make a smooth paste. Add the paste to the mixture and stir it in.
  5. Sift (with a sieve) the baking powder and about half of the flour over the mixture. Add half of the yogurt. Gently fold the ingredients together.
  6. Sift the remaining flour into the bowl. Tip any bran left in the sieve into the bowl too. Add the rest of the yogurt and fold it in. Add the orange juice.
  7. Transfer the mixture into the tin. Bake the cake for one hour. The cake is baked when it feels firm. Leave it in the tin to cool.
  8. For the icing, first melt the chocolate. When the chocolate is melted, whisk in the soured cream and mix well. When the chocolate icing is cooled, spread it over the cake.

Step 11:
Sift the remaining flour into the bowl. Tip any bran left in the sieve into the bowl too. Add the rest of the yogurt and fold it in. Add the orange juice too.

Step 12:
Transfer the mixture into the tin with a spoon. Bake the cake for 1 hour. The cake is baked when it feels firm, leave it in the tin to cool.

Step 13:
Run a knife around the sides of the tin. Turn out the cake and peel off the baking parchment.

Step 14:
To melt chocolate: first take a big pot and bring water to simmer. When the water starts simmering, cover the pot with a metal colander and low the temperature.

Step 15:
Chop or break the chocolate into small pieces. Place the chocolate in a bowl over a pan of simmering water and stir regularly.

Step 17:
When the chocolate is melted, take the bowl out of the pan. Whisk in soured cream.

When it is cool, spread it over the cake.

Step 19:
You can decorate the cake with chocolate curls. Take a chocolate bar and scrape it with a vegetable peeler from the side of the bar. Chocolate will better curl when it is at room temperature.

BAKING TIPS:

•  When you bake this chocolate cake, use very soft butter.
•  Don’t put chocolate in the fridge before making chocolate curls.
•  When you melt chocolate, make sure, that no droplets of water come into contact with the chocolate, as they will cause it to become lumpy or grainy (not even a drop).
