Why is chocolate chip cookie recipe used so often in our kitchen? School fairs and charity events are some of the best baking motivators but there is sometimes a problem figuring out what exactly it is that I want to bake. After years of baking for this kind of events I came to a conclusion that yummy chocolate chip cookies are definitely my best choice. This is not such a big surprise because everybody likes the taste of chocolate and a chocolate chip cookie recipe is also very easy to follow. Here you go, that's why.
I've made some experiments with ingredients and sometimes I add a mix of orange and lemon peels, different spices and a range of nuts to alter the basic chocolate chip cookie recipe. I always use dark chocolate with at least 60% of cocoa. I actually often chop a bar of dark chocolate into small cubes and use them instead of ready-made chocolate chips. So, in fact, I very rarely bake the same chocolate chip cookies for school events.
Well, of course we bake them for home use as well, particularly when friends come over for a cup of coffee. I am usually very short with time, so baking using this chocolate chip cookie recipe doesn't lead to headless chicken moments. The other major advantage is that chocolate chip cookies match coffee so well.
This chocolate chip cookie recipe is also one of those baking recipes I usually have to share with everyone. Honestly, people are simply too lazy to bake at home but somehow this chocolate chip cookie recipe has become very popular among my friends. It is one of many easy recipes for kids and children just like it. There are parts of the recipe where children need help from adults like melting and chopping chocolate, but otherwise school children can bake it more or less independently. They just need to know how to weigh ingredients. The rest is pretty much self explanatory.
Chocolate chip cookie recipe:

INGREDIENTS:
- 100g (4 oz) softened butter
- 150g (5 oz) self raising flour
- 1 large egg, beaten
- 75g caster sugar
- 1/2 tsp vanilla extract
- 1/2 tsp ground cinnamon
- 100g (4oz) dark chocolate chips
- handful mixed peels (orange and lemon peels)
- 80g dark chocolate, melted
Method - how to make chocolate chip cookies:
- Preheat the oven to 375F/170C fan oven/190C ordinary oven/gas mark 5. First lightly grease two baking sheets/trays with butter.
- Measure the butter and sugar into a bowl and beat until evenly blended.
- Beat the egg and add vanilla extract.
- Add beaten egg with vanilla to the butter and sugar mix (a little at a time and beating well between each addition).
- Mix in the flour.
- Melt dark chocolate. To melt chocolate, first chop or break it into small pieces. Place the chocolate in a bowl over a pan of simmering water (the bottom of the bowl shouldn't touch the water). Stir until the chocolate melts - about three minutes. Make sure that no droplets of water come into contact with the chocolate as they can cause it to become lumpy or grainy.
- When the chocolate is lukewarm add it into the mixture and stir well. Then add cinnamon and stir.
- At the end add dark chocolate chips and mixed peels and stir.
- Spoon large teaspoons of the mixture onto the prepared baking sheets/trays and leave some space for the cookies to spread.
- Bake them on 375F/170C fan oven/190C ordinary oven/gas mark 5 for 10 minutes. Leave the cookies to cool on the sheets/trays before lifting off.
- Store them in an airtight container where they will stay fresh for a week.

Method (step by step):
STEP 1:
Measure the butter (100g/4oz) and caster sugar (75g/2.64oz) into a bowl and beat until evenly blended.
STEP 2:
Beat the egg (1 large egg) and add vanilla extract (1/2 tsp).
STEP 3:
Add beaten egg with vanilla to butter and sugar mixture (a little at a time and beating well between each addition).
STEP 4:
Mix in the self raising flour (150g/5oz).
STEP 5:
To melt dark chocolate (80g/2.82g), first chop or break it into small pieces. Place the chocolate in a bowl over a pan of simmering water (the bottom of the bowl shouldn't touch the water). Stir until the chocolate melts, which is about three minutes. Make sure that no droplets of water come into contact with the chocolate as they can cause it to become lumpy or grainy.
STEP 6:
When the chocolate is lukewarm add it into the mixture and stir well. Add ground cinnamon (1/2 tsp) and stir.
STEP 7:
Add dark chocolate chips (100g/4oz),...
STEP 8:
...and handful of orange and lemon peels, and stir well.
STEP 9:
Spoon large teaspoons of the mixture onto prepared baking trays and leave some room for the cookies to spread.
STEP 10:
Bake them on 190C/fan 170C/gas 5/375F for 10 minutes. Leave the cookies to cool on the trays before lifting off.
Store them in an airtight container where they will stay fresh for a week.

And which coffee is the ultimate winner?
Right, this is again one of those tough calls depending on individual preferences. I believe the sweet and rich taste of chocolate should prevail. That is why I would have chocolate chip cookies with cappuccino in the morning and cafe latte during the day. For my husband, orangey flavor that pushes its way to the front is what he is looking for and loves how well coffee and chocolate flavors blend neutralizing the sweetness. He would therefore have these cookies with Turkish coffee in the morning and sometimes with a shot of espresso in the afternoon. Personally, I am definitely in favor of cafe latte.
Baking tips
- Bake chocolate chip cookies in the pre-heated oven, on the top shelf.
- Don't open the oven door in the first stages of baking.
- Don't overload your oven with baking trays or they will be unevenly baked.
- Don't leave chocolate chip cookies on the tray to cool completely, as they can stick to the base.
- Use metal spatula for lifting.
- Always read the recipe carefully and tick off ingredients to prevent missing anything.
