Blueberry
muffin recipe is one of those recipes which are tried almost every week
in our kitchen. Freshly baked blueberry muffins and a yummy
cup of coffee - definitely my breakfast from heaven. In essence, I just like
blueberries in any form, fresh, baked in
different types of cakes, in the ice cream,...
In general I am Turkish coffee lover but there is a reason why I prefer cappuccino with
yummy blueberry muffins
in the morning. I believe the taste of food should prevail over coffee
in the morning. In the case of blueberry muffins I just don't want to miss their
sweetness the refreshing taste of blueberries. That makes cappuccino the
best choice because its mellow character allows the taste of yummy muffins to
be much more profound. But of course blueberry muffins are not reserved
just for breakfast.
My friends and family are glad when I serve them together with the afternoon
Turkish coffee.
In the afternoon, on the other hand, most of the people that I know love
their yummy coffee to be strong and full bodied (the obvious reason for that
might be tiredness). That makes
the sweetness of muffins secondary. The smell of freshly brewed Turkish coffee and
its taste help people to stay "awake" until evening but at the same time
the sweet flavor and freshness of blueberries give them enough
excitement to "survive" the rest of the day.
This is the blueberry muffin recipe which has
been recently baked in our kitchen.
Makes: 12
INGREDIENTS:
- 1 cup or 250ml of milk
- 110g unsalted butter
- 1 1/4 (260g) cup granulated white sugar
- 2 eggs - lightly beaten
- 1/2 tsp cinnamon
- 1/2 tsp vanilla extract
- pinch of salt
- 400g all purpose flour (self raising flour)
- 1 tbsp baking powder
- 1 1/2 cup or 375ml of fresh or frozen blueberries
- Mix together flour,
sugar, a pinch of salt and baking powder. Divide butter into small
pieces and rub them in the flour mix.
- Set aside.
- Mix together milk, eggs, vanilla extract and set aside.
- Add the milk and egg mixture to the flour mixture and mix together.
- Gently fold in the blueberries, don't over mix because the batter will turn
blue.
- Bake muffins on 350 degrees F/177 degrees C (fan oven) for 20-25
minutes. Put the muffin tray in the middle of the oven.
- Before serving, leave blueberry muffins to cool in the muffin tray
for about 10 minutes.

Useful baking tips:

In blueberry muffin recipe use fresh
blueberries instead of frozen, because fresh blueberries give muffins
naturally sweeter taste.

When you add blueberries to batter do not over
mix because it will turn blue.

before baking, their top will be nice and crispy.

To freeze freshly picked blueberries, place
them in a single layer on a cookie sheet and put in the freezer.
When frozen, put them in the freezer container. Don't rinse them before
freezing!

toothpick inserted in the center comes out clean.

more, otherwise they will have an unusual shape.

finely powdered medium roast coffee beans in a pot called ibrik. You can add
sugar too.
