Healthy Muffin Recipes & Coffee

Muffin recipes, oh my! I was always scared of the thought of baking muffins myself. In reality and with well thought through recipes, making them is a piece of cake, quite literally. Muffins are very popular. Some like them hot from the oven and still some like them cold. I definitely prefer a steaming warm yummy muffin with my deliciously hot morning coffee making weekends absolutely perfect.

 

It's Sunday morning, my kitchen is filled with a rich aroma of freshly baked muffins. Then my husband brews an ibrik pot of Turkish coffee and a few minutes later the aromas blend into an irresistible mix that simply makes my day. Can you imagine?

 

My choice of coffee depends on the desired effect. Sometimes I want to enhance the taste of coffee and reduce the sweetness of muffins. However, sometimes my sweet teeth "demand" the rich and fruity flavors to win over coffee. This has become ceremonial so my husband then doesn't help so much with baking but he has managed to bring Turkish coffee brewing close to perfection and admittedly I really enjoy being spoilt with a yummy cup of coffee.

 

Then again every here in a while we swap our beloved Turkish coffee with a big and yummy hot cappuccino or cafe latte. There are so many choices of different coffee drinks and coffee brews to go along with muffins. We have tried many of them, compared tastes and we are still stuck with Turkish coffee. We simply like the taste of coffee to prevail over muffins. But in the opposite case cappuccino is a wonderful choice as well. It's literally up to your own taste how you like it best.

All healthy muffin recipes on this site are recipes for American-style muffins. So batter is made by using baking powder and not yeast. Usually I add various nuts, chocolate, fruit chunks (fresh or frozen), pumpkin seeds, cinnamon, vanilla extract and more to enrich the taste and make them more attractive and yummy. It's all about imagination really.

 
Muffin baking tips

  • The time needed to bake muffins is around 24-27 minutes at 170-200 degrees C (345-395F). You're safe if a wooden tester (toothpick) inserted into a muffin comes out clean. Make sure they are always baked in the middle of oven and regularly control the temperature. Reduce the temperature if they become too brown on the edges too soon (e.g. after 10 minutes or earlier).

  • Be sure not to overfill a muffin cup with batter. Fill them just 1/2 to 2/3 otherwise the dough will spill over beyond the desired effect.

  • The word "muffin" was first recorded in English in 1703 as "moofin", possibly derived from the Old French moufflet, which meant "soft" in reference to bread or from the Low German muffen, meaning "small cakes".

  • Muffins are baked in a muffin tin. There are variations with room for 6, 8, 12, 24 and even more muffins. They are made of aluminium, stainless steel, cast iron or even silicon.

  • Muffin paper cup liners are round sheets of paper, paper or foil with scallop-pressed edges, giving muffins a round cup shape. They are used to line the bottoms of muffin pans. The paper cup liners enable easier removal from the tin, easier cleaning and muffins retain soft and moist texture.

  • Muffins are generally considered to be a yummy breakfast food, but in Britain they are eaten during the afternoon tea as well.

  • There are two types of muffins: English muffins are different from American muffins. English healthy muffin recipes are traditionally based on yeast dough. The American-style healthy muffin recipes are made using baking powder or baking soda.

  • Cappuccino is prepared with espresso, hot milk and steamed milk foam. The foam on top of cappuccino helps liquid to stay hotter for longer.

  • The best source of good healthy muffin recipes is in my opinion internet. There are a few cooking books with good healthy muffin recipes, but searching web is the easiest way to find the right one.
