Rice pudding recipe with added apples is like Marmite to some people. You either love it or hate it. Some just don't like steaming apples together with rice (one of my friends told me once that apples ruin the taste of cooked rice), but I absolutely love apples. The taste of rice pudding becomes far more refreshing. On the other hand, peaches and apricots are also a great choice during the season.
For this particular baked rice pudding with apples I use my mum's recipe. The basics are the same as in the regular baked rice pudding recipe. The difference is in added apples. Use your favourite apples but they should be well ripen, not too sour and juicy. It is the personal choice of taste if you wish to add sugar or not. I tried this several times and 80 g of sugar added to cooked rice and egg whites is more than enough for this dish.
I always sprinkle apples with freshly squeezed lemon juice to retain their colour and get them taste more refreshingly. Baked rice pudding with apples could be eaten hot directly from the oven (that's usually my choice), but it is also great cold, especially during the summer.
Baked rice pudding recipe with apples:
Makes: 6 medium portions
INGREDIENTS:
- 250g long grain rice
- 1 liter of milk
- 100g unsalted butter
- 80g sugar
- 4 eggs
- breadcrumbs
- 4 - 5 apples
- Wash rice under the running water. Cook it in 1 liter of milk until the rice is soft. Add a pinch of salt.
The rice should be cooked at lower temperature. Stir all the time because it can stick to the bottom of the saucepan. Separate egg yolks and egg whites.
- Thinly grate apples and sprinkle them with a few drops of lemon.
- When the rice is cooked add butter and 40g of sugar.
- Whisk egg whites and before you finish up with whisking add the remaining sugar (40g) and mix it in.
- When the rice is cooled and the butter is melted add egg yolks and stir them in the cooked rice.
- Carefully fold the rice mixture in the egg whites and stir very gently.
- Grease the oven proof pan with butter and coat it with breadcrumbs.
- Fill the dish with a half of rice mixture and make one thin layer of grated apples.
Cover the apples with the remaining rice mixture. Cover all the apples.
- Bake the rice pudding in the preheated oven around 45 minutes. First 10 minutes on 200 degrees C. After 10 minutes lower the temperature to 170 degrees C. If you see that the top is getting too brown just lower the temperature to 150 degrees C.

Method (step by step):

Grease the oven proof pan with butter and coat it with breadcrumbs.
STEP 8:
Fill the dish with half of the rice mixture cover with a thin layer of grated apples.
Cover apples
layer with the remaining rice mixture. Cover all apples evenly.
STEP 9:
Bake the rice pudding in the preheated oven for around 45 minutes. First 10 minutes
at 200 degrees Celsius. After 10 minutes lower the temperature to 170 degrees C. If you see that the top is getting too brown just lower the temperature to 150 degrees C.

Baked rice pudding with apples is rich, moist and yummy and blends really nicely with Turkish coffee for one simple reason. Unlike espresso, Turkish coffee is smoother making just the right balance between coffee and apple flavors. The coffee taste surfaces immediately after your first sip and doesn't make such a big contrast as in the case of cafe latte or cappuccino.
Baking tips
- After 10 minutes lower baking temperature to 170 degrees C otherwise the pudding could be burned (relevant to any rice pudding recipe).
- Choose apples which are not too juicy, otherwise the baked rice pudding will be too "moist".

- Apples are delicious and provide essential vitamins, minerals, antioxidants and fiber that may help to protect from chronic diseases.
- People who suffer from diarrhoea, constipation, diabetes, some types of cancer (colon) could benefit from eating apples.
- For some people a raw apple is to hard to digest and may lead to problems with gas and bloating. To solve this problem it is necessary to cook apples.
- Eat apple with its skin, because it is full of good fibre but rinse well before use.
