This is the Tiramisu recipe I have never tried. Yep, I'm not ashamed. It's simple, the recipe I'm presenting here is my husband's territory and I've just never been bothered to interfere.
My husband Milan is a hard working man. Contrary to a popular belief his academic life is very demanding. Travelling around the world, consultancy assignments, excruciating meetings every single day, writing several books and blogs (
http://www.justyouandus.wordpress.com), inventing new things, helping me with web sites, and at the same time being a devoted husband and father is a lot of work for one person. How on earth can he do so many things at the same time, be so fast and efficient and then again never complain about his life? It's all about his personality I guess.
He's got a pretty typical scanner personality and it's not a secret we often find it difficult dealing with his speed and following all his interests (scanner is a hard-wired personality with many passionate interests rather than a single driving passion). No worries, there are also days when he surprises us with sweet and yummy cakes, like Tiramisu for instance. He just loves spoiling us with yummy food. And we never complain, of course!
OK, lets go to our Tiramisu cake recipe. The good news is that this yummy Tiramisu recipe is unbelievably low in fat and calories (around 150 calories per serving). So, it is suitable for people who are on a diet too. This cake recipe doesn't need baking, just cooling in a fridge. That is why it is so popular during hot summer days. Do I need to mention its nice refreshing taste?
Tiramisu recipe:
INGREDIENTS:
- 150g sponge fingers or ladyfingers
- 500g Greek style yogurt or Vanilla yogurt
- 3/4 tsp cinnamon
- 4 tsp vanilla extract (not needed if you use vanilla yoghurt)
- 15 ml dark aromatic rum (Jamaican or Puerto Rican are most aromatic)
- 125 ml instant drink made from barley, rye and chicory - caffeine free
- 50g grated dark chocolate
- Mix together Greek style yoghurt with 4tsp of vanilla extract and 3/4 tsp of cinnamon and put it straight into the freezer for an hour or two until part frozen (no need for vanilla extract if you use vanilla flavored yoghurt). Line a loaf tin with cling film.
- In a bowl mix together caffeine-free drink and rum. Quickly dip sponge fingers in Caro and rum mixture and place one by one to cover the bottom of the loaf tin.
- Spoon the yogurt over the sponge fingers (they need to be covered completely). Sprinkle with grated dark chocolate.
- Quickly dip more sponge fingers in the rum caffeine-free mixture and place on top of the grated chocolate layer. Add another layer of yogurt and grated chocolate.
- Make the last layer with the remaining sponge fingers, yoghurt and dark chocolate.
- Place the loaf tin in the freezer for one hour. After one hour put it in the fridge leaving overnight if possible. Flavors are much more intensive if you leave it at the room temperature for at least 20 minutes before serving.

Method (step by step):
STEP 1:
Mix together yogurt with vanilla extract and cinnamon and put it into the freezer for an hour or until part frozen.
Line a loaf tin with a cling film.
STEP 2:
Mix together caffeine-free drink and rum (you can use coffee as well if you want).
STEP 3:
Use a shallow bowl for dipping sponge fingers as it might be tricky handling them.
STEP 4:
Quickly dip sponge finger cookies in the rum and caffeine-free drink mixture and place them side by side in a loaf tin.
STEP 5:
Cover the sponge fingers with yogurt.
STEP 6:
Grate dark chocolate over the yogurt layer.
STEP 7:
Be generous though this takes some time.
STEP 8:
Repeat the whole process 2 times:
- first dip sponge cookies
- lay them side by side to make the layer number two
- cover with a layer of yogurt
- sprinkle with grated chocolate
- and repeat this once more for the last time.
STEP 9:
This is it. Now, our Tiramisu is going into a freezer for about an hour. After that transfer it into the fridge.
For best results leave Tiramisu in the fridge overnight and at room temperature for about 20 minutes just before serving.

Baking tips
- You can replace caffeine-free beverage with black coffee (espresso based Americano for instance).
- If you want non-alcoholic version of this cake recipe swap rum with different flavorings which would give Tiramisu a specific taste.
- Tiramisu is even better if it is prepared one day in advance so the flavors have time to mix.
